Seasonal Recipe: Berries & Cream

The market has been taken over with strawberries and we’re hoping for a few more weeks of invasion. And if you’re obsessed with these little red gems like we are, you absolutely need to know how to make your own, fresh whipped cream. Because let’s face it: BERRIES + CREAM = BLISS.

Whipped Cream (dairy free alternative below)whipped cream bowl

1 1/2 cups heavy cream, chilled
3 Tbsp powdered sugar
1 1/2 tsp vanilla extract

Chill a large bowl or bowl of your mixer in the freezer for 10 minutes. Place all ingredients in bowl and using a hand mixer or stand mixer, beat the cream mixture for 3-5 minutes. The cream will start to come together and thicken up. You know it’s done when soft peaks form when you lift your beaters from the cream. Don’t mix too long or you’ll end up with sweet butter!

Dairy Free Whipped Cream

1 can full fat coconut milk (kept in fridge overnight)
3 Tbsp powdered sugar
1 1/2 tsp vanilla extract

Chill a large bowl or bowl of your mixer in the freezer for 10 minutes. Once the bowl is chilled, open can of coconut milk and spoon the solid part of the coconut milk (the coconut fat or butter) into the bowl.

Place all ingredients in bowl and using a hand mixer or stand mixer, beat the cream mixture for 3-5 minutes. The cream will start to come together and thicken up. You know it’s done when soft peaks form when you lift your beaters from the cream.
